Tart & Sweet Cranberry Relish

Description
A berry crunchy side salad or a great lettuce wrap snack. Best eaten with a protein source to slow down absorption of natural sugars by the body.
Ingredients
| 2 | c | fresh cranberries |
| 1 | medium apple | |
| 1⁄4 | c | apple or orange juice |
| 1⁄2 | c | dates |
| 1 | peeled orange (keep rind) | |
| 1⁄4 | grated orange rind | |
| 1 | pn | cloves |
| 2 | rippened pears (barlett or asian) | |
| 1⁄2 | c | raisins |
| 1⁄2 | c | honey |
| 1 | grattings of fresh ginger (to taste) | |
| 1 | pn | cinnamon and allspice |
Instructions
Chop peeled orange, apple and pears. Grind cranberries in a food processor and add to chopped fruits.
Add raisins, honey, finely grated orange rind & ginger, apple juice and spices. Refrigerate combined ingredients
overnight. A variation is to cook whole cranberries and add them to the remaining ingredients. Frozen cranberries
may be used instead of raw. May add chopped walnuts, pecans, or almonds as a topping before serving.
(Honey may be substituted with stevia, truvia or agave but you will have to sweeten according to taste.
You may also enhance natural sweetening by adding more raisins or pears to the mixture).
